Directive 2000/36/EC sets compositional requirements for chocolate and limits the use of vegetable fats other than cocoa‑butter (the so‑called cocoa‑butter equivalents, CBEs) to a maximum of 5 % of the final product. When CBEs are present, they must be declared on the label. Enforcement relies not only on the legal provisions but also on robust analytical tools that enable practical verification.
Compliance is assessed through a triacylglycerol‑profiling approach originally developed by the JRC, which enables the detection and quantification of CBEs in chocolate. The methods were calibrated and validated using a cocoa‑butter matrix CRM, guaranteeing accuracy, comparability and traceability across laboratories. International collaborative trials have confirmed the robustness of these methods, leading to their adoption by standardisation bodies and publication as international documentary standards [2-6].
To assist analysts, the JRC provides two toolboxes, CoCal‑1 and CoCal‑2 [7], which include the standardised methods, the CB CRM for calibration and electronic evaluation sheets.
After around 20 years of use, the original CRM (IRMM-801) was exhausted. Because the triacylglycerol‑profiling method that underpins chocolate‑authenticity testing is calibrated against a cocoa‑butter CRM, the entire analytical approach loses its metrological reliability if the calibration reference is missing or not used correctly. ERM‑BD801 replaces IRMM‑801, being certified for the same five triacylglycerols and preserving the established analytical system for chocolate‑authenticity control, thereby guaranteeing long‑term operational use.
ERM‑BD801 supports the implementation of the international documentary standards used to control chocolate authenticity [2‑6], provides harmonised measurements and consistent results across laboratories, and consequently strengthens enforcement of the Chocolate Directive [1]. Regular use helps prevent chocolate fraud, maintains consumer confidence and ensures regulatory compliance throughout the European chocolate sector.
